Cinnamon Cookies


Hi everyone! Sorry I've been MIA last week, I just had to push out those last midterm deadlines. But I've done it and I have a little bit more free time again! I have decided that I'm going to try to upload two times on my blog from now on - three is just a bit too much with the end of term coming closer and closer. Nevertheless, I think it's important to make some time for hobbies, so there's no way I'm going to leave you anytime soon!


Today I'm sharing a recipe with you which may as well be my ultimate favourite. You probably already know my love for cinnamon in autumn, and I wanted to create a recipe that is on the one hand supereasy and quick to whip up but on the other tastes delicious and quite special.
Since Christmas is approaching fairly quickly (I can't wait!), I wanted to make something that reminds me of these cozy days.

I feel like the combination of the sweet cranberries, the dark chocolate and the cinnamon is the ultimate cold-days-guilty-pleasure. Grab some tea, a book and a blanket and you're set!

INGREDIENTS
  • 1,5 cups of all-purpose flour
  • 0,5 cup of brown sugar
  • 0,5 cup of coconut oil
  • 1/4 cup of honey
  • 1 egg
  • 2,5 tsp of cinnamon
  • 0,5 tsp of baking powder
  • 0,5 tsp of baking soda
  • 1 tsp of vanilla extract
  • 1/4 tsp of salt
  • 0,5 cup of dried cranberries
  • 70 grams of dark chocolate,
    chopped up
GET BAKING
Start off by melting your coconut oil and honey together in a
sauce pan on a low heat. Let this cool down completely.
Mix together the honey/coconut mixture and the sugar in a bowl.

In another bowl, mix all of your dry ingredients together except for
the cranberries and chocolate. Add the sugar/honey/coconut mix, the
egg and the vanilla extract to your dry ingedrients and mix until
a smooth batter is formed.

Then add your cranberries and dark chocolate and make sure
everything is fully combined.
Refridgerate for 15 minutes.
Preheat your oven to 180 degrees Celsius. Line a baking tray with some
baking paper and form medium-sized balls of dough.
I made 8 cookies, but you can make them smaller so you have more.
Press the balls a little flat.

Bake your cookies for 15-20 minutes.
Transfer to a wire rack to cool down.

  1. Oeh dit ziet er heel lekker uit, ik houd ook van kaneel en van pure chocola en cranberries. Ga dit dan ook zeker een keer maken :). En mooie foto's heb je gemaakt!
